In the peaceful landscape of Dharamshala, Aahaar Café Dharamshala, Art & Wellness Centre at Rakkar, stands as a quiet refuge—known not for extravagance, but for intention. Founded by Pankaj Sehjowalia and Nidhi Nikhanj, Aahaar was never meant to be “just a café.”, It is an Art & Wellness Centre. It emerged from years of observing how deeply our eating habits and emotional patterns shape us.
Their understanding began during their time at the National Institute of Design, where they experienced firsthand how stress, irregular meals, and lifestyle imbalance affected students. Nidhi’s own health challenges—including hormonal imbalance and hypothyroid issues—deepened their journey, while Pankaj’s extensive research across more than 50 schools revealed a similar pattern among children.
Together, they realized that wellness must begin early, and food plays the central role.
A Campus Experiment That Became a Movement
In 2009, the duo launched a healthy food service inside the NID campus. They prepared satvic-style,
vegan sandwiches and Kathi rolls with clean ingredients and clear intention. What started quietly soon transformed into a campus-wide movement. Students & Faculty members loved Aahaar, People of Ahmedabad lined up outside the gates, and their offerings gained unexpected popularity.
Simultaneously, Pankaj developed Healthy Go Round, an innovative edutainment game aimed at helping children understand nutrition, yoga and healthy habits. This blend of creativity, wellness, and education marked the first spark of what would later become Aahaar, a sanctuary of holistic wellness.
A Himalayan Calling — Rebuilding Life with Purpose
After the pandemic reshaped life globally, Pankaj and Nidhi moved back to the mountains. Dharamshala’s calm became a space for clarity. Here, under their creative and wellness umbrella called Lotusutra, Aahaar Café, Art & Wellness Centre, took birth—alongside L’ART GALLERY promoting Soulful Art, and Emotional Wellness Coaching.
Aahaar was conceived not as a commercial outlet, but as a healing ecosystem. A space where food, art, mindfulness, and emotional balance blend seamlessly into daily life.

Challenges of Running a Conscious Café in the Mountains
Operating a niche wellness café in a semi-rural Himalayan region wasn’t easy. Seasonal tourism, limited skilled staff, fluctuating footfall, and higher ingredient costs created constant challenges. There were also cultural hurdles—many people associated “good food” with heavy spices, oil, and excess indulgence.
Yet, Aahaar never drifted from its foundation.
The café maintained quality, intention, and authenticity—even when the easier path was to compromise.
Their resilience became their identity.

Aahaar’s operations reflect sustainable living in practical ways. All kitchen waste is fed to cows and goats. Minimal packaged ingredients are used, reducing plastic waste. A largely women-led support team ensures consistent, grounded operations. The founders conduct weekly online & physical workshops focused on soulful art, emotional well-being, mindful eating to reverse lifestyle disorders.
